ANGLE FOOD CAKE




Ingredients:


Egg Whites - 4 No.s


Castor Sugar - 110 gms


Salt - 1⁄2 - 3⁄4 gms


Cream of Tartare - 1⁄2 gms


Vanilla Essence - 3 ml


Cake Flour - 35 -40gms


Lemon Zest - 1⁄4 no


Lemon Juice - 1⁄4 no


Method:

a) Whip up the whites, half amount

of sugar, salt, cream of tartareand vanilla essence to a stifffoam.


b) Fold in the flour mixed with thehalf of the sugar.


c) Bake at 340 F (163 C).


d) Cream of tartare is notabsolutely necessary, but theacid formed when it dissolves inegg whites softens the albumen(protein component) and helps ingreater absorption of air cells. Italso has a whitening effect onthe interior crumb of the cake.
